Smooth Broccoli Soup
Ingredients
3 lbs broccoli crowns
10 cups water
2 tsp Chicken Better Than Bouillon Paste (I used this, but you can replace it with 3 chicken stock cubes or 3 vegetable stock cubes)
Italian Seasoning or herbes de Provence
Salt
Coriander
Cayenne Pepper (1/2 tsp)
8 original Vache qui Rit cheese triangles (Laughing Cow cheese)
Fill a large saucepan with 10 cups of water: Add 2 tsp of chicken Better Than Bouillon Paste or 3 stock cubes – flavor of your choice
Add spices: Bring the mixture to a boil.
Add the broccoli: cover and simmer for 6 minutes, let the soup cool down for 15 minutes
Add the cooked broccoli in 3 batches to a Vitamix, blender or food processor, pour in 4 ladles of bouillon and 3 Laughing Cow cheese triangles. The last batch being smaller, I added 2 cheese triangles. Combine the 3 batches in a large bowl.
