Banana Bread

It is that time of the year where I look to food for tried and true wholesome, natural, feel good recipes that I can enjoy with our boys! I’ve prepared this one bowl banana bread treat with different variations that keep the whole family wanting seconds, and since I know exactly what I’ve put in this recipe I’m more than happy to let them indulge.

Ingredients:

Wet Ingredients:

3 (300 g ) large bananas (best if very ripe)

1 apple peeled and shredded

2 tablespoons (15 g ) ground flaxseed

1/3 cup (80 ml) plant-based milk ( I like oat milk)

1/3 cup (80 ml) melted coconut oil (melted)

2 tablespoons (30 mL) pure maple syrup

2 teaspoons (10 mL ) vanilla extract

Dry Ingredients:

2 tablespoons (15 g) organic cane sugar or coconut sugar ( I prefer cane sugar)

1/2 cup (50 g) rolled oats

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon fine sea salt

1 1/2 cups (210 g) flour

Optional

  • 1/2 cup (85 g) mini chocolate chip ( I use dark chocolate chips)

  • 1/2 (70 g ) crushed up pecans

Directions:

1. Preheat oven to 350 F. Line a 9x5 - inch loaf pan with parchment paper, lightly spray with oil, and set aside.

2. In a large bowl, mash the bananas until almost smooth.

3. Stir the wet ingredients ( ground flax, milk, melted oil, maple syrup, and vanilla) into the mashed banana until combined.

4. Stir the dry ingredients, one by one, into the wet mixture, in this order ( sugar, oats, baking soda, baking powder, salt, and flour ). Stop mixing when there are no flour clumps in the bowl.

5. Spoon the dough into the loaf and spread out evenly.

6. Bake the loaf, uncovered for 55 minutes ( I bake for 50 minutes then check and depending may add 5 minutes if it seems too humid in the middle ), until lightly golden and firm on top. You want the top of the loaf to slowly spring back when touched.

7. Place the loaf pan on a cooling rack, use a flexible spatula to slide around the loaf to loosen it and gently remove it from the parchment paper. Let cool for 30 minutes.

8. Slice the loaf once cooled. My preferred way to indulge in this delicious banana bread is by spreading my all time favorite butter Beurre de Baratte from Mr. Marcel You can order this butter online or if you’re in L.A. head to the Farmers Market at the Grove for a thriving culinary sensory shopping experience!
